What & Where is Cognac?
Cognac is a brandy produced in the region of Cognac in France. In order for a brandy to be Cognac, the grapes must be grown in the Cognac region and goes through a fermentation and double distillation process. Cognac is located at the centre-western coast of France.How many regions are there within Cognac?
There are a total of 6 regions within cognac namely Grande Champagne, Petite Champagne, Borderies, Fin Bois, Bons Bois and Bois Ordinaires. You will find out more about the climate, soil condition and nature of the grapes produced in each region during the cognac appreciation course.
What does VS, VSOP and XO mean?
VS means Very Special. In accordance to the law of France, the cognac must mature in the oak barrel for at least 2 and a half years to claim VS.
VSOP means Very Superior Old Pale. In accordance to the law of France, the cognac must mature in the oak barrel for at least 4 and a half years to claim VSOP.
XO means Extra Old. In accordance to the law of France, the cognac must mature in the oak barrel for at least 6 and a half years to claim XO.
No maturation process takes place after the cognac is bottled. Therefore under ordinary circumstances, an "old" bottle of cognac should not cost more than a "new" one. There are exceptional cases though and you will be enlightened in our cognac appreciation course.
